1 recipe of Basic Quinoa, prepared
1/2 cup extra-virgin olive oil
1/4 cup lemon juice
1/4 cup apple cider vinegar
sea salt and pepper to taste
2 medium cucumbers, seeded and chopped (If the seeds are mature, remove them with a slice of the knife. Young, unformed seeds can be left.)
2 medium tomatos, seeded and chopped
1 can of chick peas, drained and rinsed (look for organic)
1 bunch parsley, chopped
1/2 cup fresh mint (adds amazing flavor)
1. In a small jar, combine olive oil, lemon juice, apple cider vinegar, salt and pepper. Shake well.
2. Combine remaining ingredients, add dressing. Toss. Serve. Enjoy.
