I went looking for a long ago recipe for a delicious breakfast and found that the name had changed. Once called Muesli, it is now known as Overnight Oatmeal. And recipes abound on the internet. Here is my recipe for an old favorite. For sustained energy throughout the morning, make sure to add healthy fats and protein to this breakfast. The basic recipe is one part oats, one part water. From there, the variations are endless.
1 cup water
1 tablespoon lemon juice
1 apple, shredded or chopped
1 cup rolled oats (organic, please)
1 tablespoon honey
1/4 teaspoon cinnamon
1/2 cup dried fruits
fresh fruit, coconut, yogurt, nuts, pumpkin or chia seeds.
Combine water and lemon juice in a bowl; add apple, including peel, to the water. Combine remaining ingredients. Cover and refrigerate overnight. In the morning, top with nuts, pumpkin or chia seed, coconut, yogurt, and/or fresh fruit. Keeps for a couple of days.
