This recipe, in some form, has been a part of our Thanksgiving menu for a couple of generations. In the beginning it contained strawberry jello and lots of sugar. I prefer the fresh tart taste of these ingredients with much less added sugar. Make this a day ahead and serve it up with your turkey feast. Or fill a quart mason jar full and take to your next holiday potluck. It is beautiful and tasty. Use all organic ingredients to make it healthier.
1 12 ounce bag of fresh cranberries
3/4 cup sugar
1 cup diced celery (1/4″ dice)
Prepare each ingredient separately (if you grind them all together you won’t get the beautiful presentation or the flavor. Ask me how I know.) Coarsely chop cranberries by hand or in a food processor. Grate or chop apple, including the peel. Remove seeds from the orange and then grind finely, including the peel. Chop celery into a 1/4 inch dice. (This is best done by hand because a food processor will chop it too finely and make it stringy.) Combine all ingredients. Cover and place in the fridge overnight to let the flavors and colors blend. Enjoy!
